Chicken Scaloppine

with mushrooms or capers

Ingredients

4 Oz Chicken breasts

Wine

Pomi tomatoes

Salt & Pepper

Capers or sauteed mushrooms

Instructions

Butterfly and cut into 4 pieces, each 4 oz. breast. Salt, pepper and dredge into flour. Saute in olive oil. Remove from pan. Add wine and reduce. Add Pomi tomatoes. Reduce, add salt and pepper to taste, capers or sauteed mushrooms. Add chicken and thicken.

Scaloppine can also be made with a wine sauce and mushrooms or a wine sauce and rosemary and garlic. Sauté chicken as usual. Remove from pan and add wine. Reduce and add a bit of chicken broth and a little bit of whole garlic for flavor. Add chicken and season accordingly.

Chicken peperonata can also be made using this scaloppine. See peperonata sauce under sauces. Add wine to pan, add peperonata sauce and then chicken.
