Paella Salad

Ingredients

1 Cup rice

1 Teaspoon crushed saffron

Chicken broth

½ Cup clear light salad dressing

1 Cup cooked peas

1 Tomatoes, chopped

¼ Cup green pepper

¼ Cup sliced scallions

Shrimp (lobster)

1 Cup cubed chicken

4 Ounces sausage (pepperoni)

More dressing if necessary

Instructions

  1. Cook the rice according to package directions with the saffron and chicken broth.

  2. Stir in salad dressing and refrigerate for 2 hours.

  3. Add the remaining ingredients and more dressing if needed.
