Minestrone

Ingredients

2 ½ Quarts water (10 cups)

1 Cup dry Great Northern beans

½ Cup olive oil

2 Medium onions, chopped

1 Clove garlic

1 Cup diced carrots

1 Cup snap beans, cut in 2” pieces

1 Cup peeled & diced potatoes

3 Cups shredded green cabbage

2 Cups chopped tomatoes

1 ½ teaspoons dry basil

3 Teaspoons salt

¼ Teaspoon pepper

2 Tablespoons chipped parsley

1 Cup elbow macaroni

½ Cup grated Parmesan

Instructions

Boil water, add beans and boil briskly for 2 minutes. Lower heat, cook uncovered for 1½ hours. Saute garlic and onion in oil. Add carrots, beans, potatoes, and cabbage - cook 2-3 minutes.

Add to beans tomatoes and spices.

Bring to boil, simmer partially covered 25 minutes.

Add macaroni and cook for 15-20 minutes.

Correct seasonings. Serve with cheese.

To double, double all but oil: 4½ teaspoons salt, 3 teaspoons basil, 5 tablespoons parsley, ¾ teaspoon pepper, 2 cup macaroni.
