Poached Salmon

7-Ingredient Dressing (Margie)

Dijon

Lemon juice

Garlic

Worchester sauce

Olive oil

Black pepper

Parmesan cheese

Salt

Instructions

Line pan with foil. Spray with Pam. Add Salmon. Season with salt, pepper, dill. Add onion, celery, and carrot to pan.

Partially cover with water or mixture of water and wine. Seal foil tightly. Cook on 400 approximately ½ hour to 40 minutes for a whole salmon and 20-25 minutes for a piece. When cool, peel off skin and clean bottom with knife. Decorate and serve with Cucumber Dill Sauce

Cucumber Dill Sauce

Finely chop 1 or 2 cucumbers, remove seeds first. Mix in bowl with approximately 2 cups of sour cream, 1/2 cup mayonnaise, salt, white pepper, dill, approximately 1 tsp. dijon mustard, and juice from 1/2 a lemon.
